Having been an English teacher for over 30 years, I spent many semesters helping students understand the difference between restrictive and non-restrictive clauses. Grammar Bytes has some comma exercises at http://www.chompchomp.com/exercises.htm which have some of these grammar activities. Some additional web resources identifying restrictive and non-restrictive clauses can be found at the following websites:

Thanks so much, Lynn!
I found the first three links particularly helpful. I couldn't find a PowerPoint slide related to grammar at the last link, if you happen to have a direct link to it - that'd be great!
I'm really looking for interactives or exercises and while there were some here - I'd love some more, if anyone else has them!
If others are reading this post, looking for the same thing I was - these are the notes I took on Lynn's links:
This site has some interactive comma exercises, some of the questions address restrictive and non-restrictive clauses

I've found some more interactive grammar sites that you may like.
1) Towson University's Online Writing Support for Parts of Speech, Punctuation, Sentence Structure, Usage
2) Guide to Grammar and Writing--homepage links to hundreds of online quizzes
4) OWL Purdue Online Writing Lab (resources)
5) English Grammar Book
Hope these offer additional help.
Here are some resources from ReadWriteThink.org that might be of help:
Thanks for adding the ReadWriteThink activities. They are directed more toward punctuation, but that is also where I headed with Katrina's original question hoping that more English teachers would read her discussion and realize that there are numerous online resources to assist in the teaching of grammar. For years, English teachers have felt it was easier to teach reading than grammar and definitely hard to teach grammar in isolation. However, with Thinkfinity resources and other online interactive sites, learning grammar can be fun. And correct grammar usage is important!!!
