Portrait Drawing Ideas?

I am starting a new drawing unit with my Art 1-2 class and I have taught portrait drawing the same way for the past 17 years and I really think I need a new direction.  It is the end of the year and they my jsut be "DONE", but I need a few suggestions for introductory motivation.  How do you start your portrait unit?

    I spend one whole day drawing a giant eye and having them make one as large as a 8 1/2 x 11 paper one step at a time as I do it on an easel. Later, I have them follow me and draw a nose, mouth and chin so they learn shading and form.

    My final is 4 1/2 hours long portrait. They choose from Johnny Depp, Orlando Bloom or Keira Knightley. I make sure they are all straight forward head shots. I use a very detailed rubric.

    They are surprisingly good after all or that.
